I love SUNDAY’S! I like to think I’m eating healthier on the weekends and that means eating Vegan. The turkey bacon and feta throws it off a bit, but it’s oh so D-LISH!
Egg whites, Coconut spray, turkey bacon, Ezekiel Bread, feta cheese, fresh salsa, green olives and pepper to taste..
Don’t like fresh salsa on your eggs?? There are so many healthy options to pair with them.. I love cutting up a 1/2 of an avocado, black olive slices and cutting a few cherry tomatoes in half to sprinkle on top. Need or crave something sweet to go with it?.. I’ll slice a few kiwis and fresh strawberries as a side. Oh.. and don’t forget the COFFEE!!

Stock up each week on all the goods.. it makes meal prep for the week that much easier. I can usually get a large head of leaf lettuce for $1.50 as opposed to $3.00 at the grocery store.. Hello! Two for the price of one!! Warmer weather means more smoothies. If you’re like me, I need add-ons with my veggies.. If I sit down to eat baby carrots or celery sticks I need humus to dip them in. With smoothies I can add fruits to them and get all the yummy nutrients I need to tackle my day. Again… more bang for your buck!
